Peanut Butter & Pistachio Cookies
These cookies are crunchy with a delicious peanut butter flavour and chunky bites of pistachios, then finished with a drizzling of melted dark chocolate. They’re equally delicious with hazelnuts, almonds, peanuts and dark chocolate chips, if you don’t have any pistachios.

Preheat the oven to 180°C (350°F), fan setting.

In a large bowl, mix the coconut sugar, flour and baking powder together until there are no lumps.

Next add the peanut butter, almond milk and melted coconut oil. Mix well until a thick mixture forms.

Add in the chopped pistachios and bring the cookie dough together using your hands.

Next, shape eight cookie dough balls using your hands. Then place the balls onto a baking tray, press down to create cookie shapes. Bake in the oven for ⏱️ 10 minutes, until golden.

If you’re drizzling dark chocolate on top; simply place the dark chocolate in a pan over a very low heat, and heat for a few minutes, constantly stirring to ensure the chocolate doesn’t burn. Once melted, remove from the heat and drizzle over the cookies.
