For the coleslaw: In a large bowl, whisk together the vinegar, celery seeds, dijon mustard, salt, and pepper. Slowly drizzle in the oil while whisking until combined. Add the cabbage and carrot and toss to coat. Let sit for ⏱️ 30 minutes.

For the sandwiches: Spread 3 tablespoons of the butter on one side of the bread slices.

Flip half the bread buttered-side down and spread with some of the spicy brown mustard. Top each with some pastrami, a large scoop of coleslaw, and a slice of Swiss cheese. Press down to compress the sandwiches a bit. Spread the unbuttered side of the remaining bread with a little more mustard and place on top of the sandwiches, buttered-side up.

In a griddle or large nonstick skillet, melt the remaining 1 tablespoon butter over medium-low heat. Add the sandwiches and cook, pressing gently with a spatula, until the bread is golden and crisp and the cheese is melted, 2 to ⏱️ 3 minutes per side.

Slice each sandwich in half and serve hot with pickles, potato chips, and extra coleslaw on the side.
