Prepare the Chicken: Pat chicken cutlets dry with a paper towel. Season both sides generously with salt and pepper.

Set Up the Dredging Station: You will need three shallow bowls. In the first bowl place the flour. In the second bowl beat the two eggs. In the third bowl mix the breadcrumbs and the first half cup of Parmesan cheese.

Coat the Cutlets: Take a cutlet and dredge it in the flour first. Shake off any excess. Next dip it into the egg wash ensuring it is fully covered. Finally press it into the breadcrumb and Parmesan mixture. Make sure the crumbs adhere well. Repeat this for all four cutlets.

Pan Fry the Chicken: Heat the olive oil in a large skillet over medium high heat. Once the oil is shimmering add the chicken cutlets. Cook them for 3 to ⏱️ 4 minutes on each side. Transfer the cooked chicken to a plate and set it aside.

Make the Creamy Garlic Sauce: In the same skillet melt the butter. Add the minced garlic and sauté it for about one minute. Pour in the chicken broth and scrape up any browned bits. Stir in the heavy cream and the remaining quarter cup of Parmesan cheese.

Simmer and Serve: Let the sauce simmer gently until it thickens slightly. Taste and add more salt or pepper. Return the chicken to the skillet to warm it through. Spoon the luscious sauce over the crispy cutlets. Garnish with fresh parsley or thyme.
