Start by peeling the carrots with a vegetable peeler, rinse under cold water; then slice into 1/2-inch thick rounds. (I like to angle them a bit so they're more oval than round).

Next, add the butter, sugar and water to a large skillet and cook on medium high heat until the butter melts; approximately β±οΈ 1 minute. Add the carrots, toss to coat; then reduce heat to low, cover the pan with a lid and cook until the carrots are tender; approximately β±οΈ 10 minutes.

Finally, sprinkle the cheese on top of the carrots and place the lid back on the pan for another minute until the cheese starts to melt. (Optional-garnish with a little parsley before serving).
