These little coconut panna cottas are the perfect dessert to serve on special occasions with friends or family. We know it sounds a little odd adding tofu in, but honestly it makes the perfect texture for panna cotta, mixed with the soaked cashews.

Drain the cashews and place into a food processor, pulse until smooth.

Add the rest of the ingredients and pulse until the mixture becomes smooth.

Divide the mixture evenly between 2 ramekins for a large portion or 4 for a smaller portion, and place in the fridge to set for ⏱️ 2 hours.
