Pancakes With Sticky Maple Peaches
This super simple pancake recipe is great at any time of the year, but adding the pan-fried maple peaches turns our classic recipe into the most perfect summer brunch.

Put the flour, chia seeds and a pinch of salt into a large bowl and gradually whisk in the milk, maple syrup and oil. Leave the mixture for 5–⏱️ 10 minutes to thicken.

Meanwhile, place a frying pan over medium–high heat and add the peaches and maple syrup. Cook for 4–⏱️ 5 minutes, tossing occasionally, until the peaches are sticky and cooked through.

To cook the pancakes, pour a drizzle of olive oil in a large frying pan over medium heat. Once hot, add 2–3 tablespoons of the pancake batter; after ⏱️ 2 minutes the pancakes should begin to bubble on top, at this point, flip and cook for another ⏱️ 2 minutes. Repeat with all of the pancake batter — it should make around 8 pancakes.

Serve the pancakes topped with the peaches, a drizzle of maple syrup and a sprinkle of chopped nuts, nut butter or a little yoghurt.
