Pan-Fried Tomato Hummus
This seriously good hummus is perfect for entertaining. Serve with crackers, fresh vegetable crudités or both — it’s guaranteed to please a crowd.

Put a splash of olive oil into a frying pan on medium-high heat. Once hot, add the tomatoes and fry for ⏱️ 5 minutes until soft. Add the garlic and fry for ⏱️ 30 seconds until fragrant. Set aside.

While the tomatoes cool, make the hummus. Place the chickpeas, garlic, lemon juice, ground cumin, tahini and 100ml / 3.4 fl oz of oil into a food processor. Blitz until smooth and creamy; add salt to taste.

Serve the hummus in a wide bowl, top with the tomatoes and scatter with fresh basil.
