Pad Thai Salad
We had this pad Thai salad in the deli and it was amazing. The crunchy raw veg tastes incredible with the creamy peanut sauce and roasted peanuts - it's definitely something you have to give a go!

Use a vegetable peeler to ribbon the carrots and courgettes.

Next, thinly slice the spring onions and chop the red chilli.

Finally, roughly chop the coriander.

Place the peanut butter, lime juice, tamari, maple syrup, ginger and a pinch of salt in a bowl and mix well. Pour into a large bowl and add all of the ingredients - mix really well until everything comes together.
