Coarsely chop the 4 pitted Medjool dates. Add them to a blender or food processor along with 1/4 cup of the milk. Blend until a smooth, creamy paste is created.

Get two mason jars or similar airtight containers ready. Divide the 1 cup of rolled oats and 2 tablespoons of chia seeds evenly between the two jars.

Add 1/2 teaspoon of ground cinnamon and 1/8 teaspoon of kosher salt to each jar.

Pour the date paste into the jars. Add the remaining 1.75 cups of milk. If using, add 2 tablespoons of honey now.

Seal both jars tightly and shake vigorously for 30 to ⏱️ 45 seconds to ensure all ingredients are well combined and oats are submerged. Place in the refrigerator.

Let the jars sit overnight (ideally 8+ hours, minimum ⏱️ 4 hours).

In the morning, remove from the fridge, stir well. If too thick, add 1-2 tablespoons more milk. Taste and adjust. Top with bananas or nuts and enjoy!
