Toss the zucchini with the oil, lemon juice, mint and salt.

Place the zucchini on a baking sheet in a single layer.

Bake in a preheated 475F/240C until slightly brown, about ⏱️ 45 minutes, turning every ⏱️ 15 minutes.

Place the zucchini on a plate and top with the feta.
