Preheat the oven to 300˚F. Mix together the salt, black pepper, brown sugar, garlic powder, onion powder, and smoked paprika in a small bowl.

Flip the ribs bone-side up. Use a knife to loosen the membrane, then pull the membrane off. Rub the spice mix on both sides of the ribs.

Wrap both racks of ribs together (side by side) in a large piece of foil, sealing the edges and seams to make an airtight package. Place the packet on a rimmed baking sheet and roast 2 to 2½ hours.

Melt the butter in a saucepan over medium heat. Add the garlic, onion, and salt; cook until softened. Add the ketchup, molasses, brown sugar, vinegar, mustard, and Worcestershire sauce. Bring to a simmer, stirring. Reduce the heat to low and cook until thickened, ⏱️ 20 minutes. Let cool ⏱️ 5 minutes, then puree the sauce until smooth. Thin with water if needed. Season with salt.

When the ribs are done, transfer to a foil-lined baking sheet and brush with sauce on both sides (use 1 to 1½ cups).

Preheat the broiler. Broil the ribs until charred in spots, about ⏱️ 5 minutes. Brush with more sauce; continue broiling until bubbling, 3 more minutes. Serve with more sauce.
