Oreo Pudding Cookies
These Oreo Pudding Cookies are a family favorite! They're crispy at the edge, but adding pudding mix into the batter keeps them heavenly soft & chewy in the center!

Preheat oven to 350°. Line a baking sheet with parchment paper and set aside.

In a stand mixer fitted with the paddle attachment mix together butter and both sugars on medium speed for ⏱️ 2 minutes. Add in the dry pudding mix and mix for an additional ⏱️ 30 seconds, scraping the sides of the bowl as necessary. Add in eggs and vanilla and mix until combined. Turn mixer to low and slowly add in baking soda, salt and flour until combined.

Stir in chopped candy and cookies.

Using a large (3 tablespoon sized cookie scoop) drop the dough onto baking sheet and bake for ⏱️ 9-10 minutes. Let cool on baking sheet for ⏱️ 3 minutes before transferring to wire rack to cool completely.
