Orange Polenta Cake
This cake is deliciously zesty and moreish. The polenta and ground almonds make a perfect, moist sponge cake - while the orange drizzle adds an incredible, sweet stickiness.

Preheat the oven to 180C (350F), fan setting.

Place all of the dry ingredients into a large bowl and whisk well to remove any lumps. Once combined, pour in the olive oil, maple syrup, orange zest and orange juice - whisk again until a smooth batter forms.

Pour the mixture into a lined 23cm cake tin, and bake for ⏱️ 45-50 minutes until cooked through.

Once cooked, remove from the oven and leave to completely cool.

Whisk together the maple syrup and orange juice and pour over the top of the cake before serving.
