One-Tray Salad
This simple salad is a great working from home lunch that makes the most out of store-cupboard essentials. A sprinkling of mixed seeds adds antioxidants, healthy fats and fibre. Serve with our creamy tahini dressing for extra richness.

Preheat oven to 200°C / 180°C fan / 390°F.

Place the sweet potato wedges on a baking tray, drizzle with olive oil and sprinkle with salt and cayenne pepper. Toss to coat.

Bake in the oven for ⏱️ 35 minutes.

Remove the tray from the oven, add the sliced courgettes and sprinkle over the seeds. Toss to coat in the residual olive oil from the sweet potatoes. Return to the oven and bake for a further ⏱️ 10 minutes.

For the dressing, whisk together the tahini, lemon juice, Dijon mustard, maple syrup and then slowly stream in the boiling water to create a smooth, pourable dressing.

When the vegetables are cooked, remove from the oven and leave to cool slightly. Serve in bowls with fresh rocket and dressing drizzled on top.
