One-Tray Crispy Cabbage Wedges

Preheat the oven to 180°C fan / 400°F and line a flat baking tray with baking parchment. In a small bowl, whisk together the sesame oil, garlic, miso, maple syrup and vinegar; then massage this into the cabbage wedges. Place the cabbage on the baking tray and bake for 25–⏱️ 30 minutes until charred and soft.

Whisk all of the tahini dressing ingredients together in a bowl and season to taste.

Put the pumpkin, sunflower and sesame seeds into a dry pan and fry for 1–⏱️ 2 minutes until golden.

Place the cabbage wedges on a platter, drizzle with the tahini dressing and chilli oil, then sprinkle over the toasted seeds and some coriander.
