Heat 1 tablespoon olive oil in a large pan over medium-high heat. Add 1 pound cubed boneless skinless chicken breasts to the pan and season with salt and pepper. Add 20 ounces refrigerated tortellini to the pan and bring to a boil; cook for ⏱️ 4 minutes, stirring occasionally to make sure tortellini is coated with liquid. Stir in ½ cup heavy cream and ¼ cup grated parmesan cheese and cook for 1 more minute.

Add the chicken back to the pan along with 1½ cups fresh spinach. Cook for ⏱️ 2-3 minutes, or until spinach is wilted. Fold in 1 cup halved cherry tomatoes. Sprinkle chopped parsley for garnish over the top and serve.
