One-Pan Vegetable Stir-Fry
This stir-fry is packed full of delicious vegetables; plus, it couldn't be simpler to make as you only need one pan. We love to enjoy it with brown rice on the side or mixed through the whole dish.

Place a large pan over medium heat and add a drizzle of sesame oil. Once warm, add the garlic and a pinch of salt. Mix well and cook for a couple of minutes until soft.

Once soft, add the remaining sliced vegetables and the mangetout. Mix well and leave to cook until the courgette becomes soft — this should take about ⏱️ 10 minutes.

While the vegetables are cooking, make the sauce by whisking together the brown rice miso paste, maple syrup, almond milk, lime juice, tahini and a pinch of salt, until smooth. Add a dash more almond milk if the sauce is slightly too thick.

Once the vegetables are soft, pour over the sauce and mix well. Serve topped with a sprinkle of sesame seeds.
