In a large skillet heat the 2 tablespoons olive oil over medium-high heat. Rub the 6 boneless skinless chicken breasts with the 1 tablespoon cajun seasoning, and cook in the skillet for ⏱️ 3-4 minutes on each side, until the chicken is cooked through. Remove and set aside on a plate covered in foil.

Add the 2 cups long grain rice, 3 cups chicken broth, 1 (15-ounce) can drained black beans, 1 (15-ounce) can diced tomatoes with juice, 1 teaspoon chili powder, ¼ teaspoon paprika, and ¼ teaspoon cumin to the skillet.

Bring the mixture to a boil, reduce heat to low, and cover for ⏱️ 20-25 minutes until all the liquid is absorbed.
