Heat 2 tablespoons ghee or butter over medium heat. Add the potatoes and cook until golden brown and tender. About ⏱️ 7-10 minutes. Remove the potatoes from the skillet and set aside.

Add the sausage to the same pan and cook until browned, ⏱️ 5 minutes, set aside with the potatoes.

Add in the zucchini and bell peppers. Sauté until tender ⏱️ 3-4 minutes.Stir in garlic and cook for an additional minute.
