One-Pan Pea & Spinach Gnocchi

To make the sauce, bring a large saucepan of salted water to the boil, then add the peas, spinach and garlic. Return to the boil and cook for ⏱️ 1 minute. Lift the veg out with a slotted spoon or drain, reserve the water and pour it back into the pan.

Transfer the vegetables to a high-speed blender, add the remaining sauce ingredients and blitz until smooth. Set aside.

Bring the water back to the boil, then add the gnocchi and peas. Cook for 2—⏱️ 3 minutes until just cooked. Drain, reserving a mugful of the cooking water and put the gnocchi back in the pan.

Pour in the sauce, along with a splash of water to loosen, followed by the lemon zest and juice. Stir gently until everything is warmed through.

To serve, divide the gnocchi into bowls and finish with a drizzle of extra virgin olive oil, the remaining basil, a pinch of salt and plenty of black pepper.
