One-Pan Creamy Chickpeas on Toast
These creamy, comforting chickpeas are brimming with nutrients like prebiotics, antioxidants, fibre, omega-3’s, protein and zinc. What’s more, it comes together minimal prep – just let the hob to the rest. We can’t decide whether we prefer it for breakfast, lunch or supper, but it certainly works for all three!

Warm the olive oil in a sauté pan set over medium heat, then add the garlic and ginger. Cook for 3—⏱️ 5 minutes until fragrant and golden.

Stir in the harissa, cherry tomatoes, chickpeas along with the stock from the jar, and a pinch of salt. Simmer for 20—⏱️ 25 minutes until the sauce thickens and has mostly reduced.

Remove from the heat, then stir in the coconut yoghurt and lemon. Season to taste and drizzle generously with tahini.

To serve, divide the toast and avocado between plates. Spoon the creamy chickpeas on top of the toast, then scatter over the herbs, sesame seeds and plenty of black pepper.
