One-Pan Cauliflower, Potato & Tofu Curry

Warm the oil in a large sauté pan, shallow casserole dish or deep-sided frying pan over medium heat. Add the cumin seeds and cook for ⏱️ 30 seconds until fragrant.

Add the onion, ginger and a pinch of salt. Cook for ⏱️ 15 minutes, stirring occasionally until softened and just golden.

Stir in the garam masala, ground coriander, turmeric and chilli powder. Cook for ⏱️ 1 minute until fragrant.

Add the potatoes, cauliflower, tofu, chopped tomatoes, 400ml / 14 fl oz cold water (you can use the empty tomato tin to measure) and a pinch of salt. Bring the boil, then reduce the heat, cover with a lid and simmer for ⏱️ 30 minutes, until the potatoes are tender.

Remove the lid and simmer for another ⏱️ 5 minutes, allowing the sauce to reduce slightly. Divide between bowls and scatter over the coriander. Delicious with steamed rice and pickles.
