Preheat the oven to 200°C fan / 425°F. Pour the cashews and hot stock into a heat-proof bowl; set aside to soften.

Place the cauliflower, sweet potato, onion, garlic and 2 tablespoons of olive oil in a large casserole dish, season generously and toss together. Bake for 35–⏱️ 40 minutes until tender and golden.

Tip the cashews and stock into a high-speed blender, followed by the oat milk, nutritional yeast, mustard, lemon zest and juice, some salt and plenty of black pepper; blitz until smooth.

Pour over the sauce, add the butter beans, kale and mix everything together. Drizzle a little olive oil over the top (optional).

Bake for 15—⏱️ 20 minutes, until bubbling and golden. Delicious served with steamed greens.
