Melt the butter in a large saucepan over medium-high heat, add the mushrooms and cook, about ⏱️ 10 minutes, before setting aside.

Add the beef on onion to the pan and cook, breaking the meat apart as it cooks, until cooked through, about ⏱️ 10-15 minutes.

Add the garlic, thyme, dill and paprika, mix in and cook until fragrant, about a minute.

Add the mushrooms, broth, noodles, mustard, worcestershire sauce, and fish sauce, bring to a boil, reduce the heat to medium, cover and cook until the noodles are tender, about ⏱️ 5-10 minutes.
