These delicious crumb bars are made with fresh blueberries and lemon on top of a crunchy crust made from oats, brown sugar and butter.

Start by preheating your oven to 350°F (175°C).

In a large mixing bowl, combine the flour, oats, and brown sugar; mix well.

Add the softened butter to the bowl and mix until the mixture becomes crumbly. Reserve 1 cup of the mixture; then use your hands to press the remaining mixture into the bottom of a greased 7x11 baking pan.

To make the blueberry filling, combine the blueberries, sugar, cornstarch, and lemon zest and juice in a medium bowl. Spread it evenly over the oatmeal crust in the baking dish.

Next, sprinkle the remaining oatmeal crumb mixture on top of the blueberry filling, making sure to cover it completely. Bake in the oven for ⏱️ 30 minutes or until the top is golden brown and the blueberry filling is bubbling.

Let it cool completely before cutting into 12 bars; then sprinkle with confectioners sugar if desired before serving.
