Nut-free Trail Mix
I love playing around with alternative ingredients and really wanted to create something which everyone can enjoy. This trail mix is such an awesome thing to make a batch of and carry around with you to snack on throughout the week. The vanilla adds the most amazing natural sweetness to it.

📝 Preparation Steps

Preheat the oven to 110C (230F), fan setting.

Peel the bananas and slice thinly, about ⅛ inch thick.

Line a baking tray with baking paper and spread out the banana slices on top.

Drizzle with the juice of half lemon and sprinkle on the teaspoon of cinnamon.

Bake for ⏱️ 45 minutes, then remove from the oven, flip each banana slice over, sprinkle with another teaspoon of cinnamon and then bake for another ⏱️ 45 minutes.

Whilst these are baking, prepare the rest of the trail mix: melt the coconut oil in a small saucepan and stir in the vanilla powder.

Mix the sunflower seeds, pumpkin seeds, puffed quinoa and coconut chips in a mixing bowl.

Add the maple syrup and pour over the melted coconut oil.

Mix everything together and make sure that everything is coated.

Line a baking tray with baking paper and pour the mix onto the tray.

Once the banana chips are ready, remove from the oven and leave to cool, this helps them become even crispier!

Turn the oven up to 180C, fan setting and bake the trail mix for about ⏱️ 10-15 minutes, giving it a mix halfway through, until the coconut chips turn golden brown.

Once these are done, take them out of the oven and leave them to cool on the side for about ⏱️ 10 minutes so it becomes really crunchy.

Once cool, add in the goji berries and banana chips, give it a good mix and enjoy!
