Preheat the oven to 160°C fan. Line a shallow baking tin (about 20 x 30cm / 8 x 12”) with baking parchment. In a small bowl, mix the flaxseeds with 6 tablespoons of water; set aside for ⏱️ 10 minutes to thicken.

In a large bowl, mix together the oats, raisins, apple, orange zest (if using), seeds, nuts and a pinch of salt (if using); stir through the almond butter.

Pour the flaxseed mixture into the bowl, along with the banana and mix until evenly combined. Transfer the mixture to the baking tray and press into a smooth, even layer using the back of a spoon or a spatula.

Bake for ⏱️ 35 minutes until golden. Remove from the oven, drizzle over a little maple syrup (if using) and cool completely on a wire rack before slicing into squares. Store in a sealed container for up to 5 days.
