In a medium saucepan, bring the sugar, butter, milk, and salt to a rolling boil over medium-high heat. Let boil, stirring often, until the surface is covered in big, rapidly moving bubbles and the mixture registers 230°F on an instant-read thermometer, about ⏱️ 2 minutes. Remove from the heat.

Stir in the peanut butter and vanilla until everything is combined and smooth. Stir in the oats and pretzels.
