Next-Level Mushroom Tart
This mushroom tart is a great dinner centrepiece. Crisp golden pastry encases a flavoursome filling of mushrooms, fresh herbs and creamy coconut yoghurt, creating a dish perfect for plant-based celebrations. Serve with roasted broccoli and spiced new potatoes.

Preheat oven to 200°C / 180°C fan / 375°F and place a large flat baking tray into the oven to preheat (this prevents your tart from having a soggy bottom).

Place the dried porcini mushrooms into a small bowl and cover with boiling water. Leave to soak for at least ⏱️ 20 minutes. After ⏱️ 20 minutes, use a slotted spoon to remove the mushrooms from the water and finely chop.

Meanwhile, place a large frying pan over medium heat and add a drizzle of olive oil. Once warm, add the onion, leek, mushrooms and garlic; cook for 15–⏱️ 20 minutes until soft and all of the liquid released has evaporated. You may need to do this in batches if your pan is small. Mix through the chopped porcini mushrooms.

Add the spinach to a pan of boiling water until wilted; then remove with a slotted spoon, cool slightly and squeeze out any excess water.

Stir through the coconut yoghurt, chives, tarragon (if using), lemon zest and spinach into the mushroom mixture; then set aside to cool.

Unroll 1 sheet of puff pastry and place onto a sheet of baking parchment.

Spoon all of the mushroom mixture lengthways along the middle of the puff pastry, leaving a 2–3cm / 1–1½″ border around the outside. Brush the border with milk.

Unroll the remaining sheet of puff pastry and place over the top, pressing around the border to join the sheets together. Cut around the corners to create rounded edges. Crimp all of the way around the edge of the pastry or press down with a fork. Brush all over with milk. Using a knife, pierce some lines along the top of the pastry and sprinkle with sesame seeds.

Remove the preheated baking tray from the oven and carefully transfer the prepared tart and baking parchment onto the baking tray. Cook for 35–⏱️ 40 minutes until the pastry is golden.
