New Potato, Red Onion & Olive Salad
This potato salad is packed full of flavour and texture from the marinated red onion and crispy roasted new potatoes. We love to serve it alongside a spread of salads or on its own with chunks of avocado mixed through and a drizzle of tahini.

Preheat oven to 220°C fan / 425°F. Place the halved new potatoes on a large baking tray with a drizzle of olive oil and a large pinch of salt. Cook for 30–⏱️ 35 minutes until the potatoes are golden and soft in the centre.

While the potatoes cook, place the sliced red onion in a bowl and pour over the apple cider vinegar, coconut sugar and a pinch of salt. Mix well and set aside until needed.

Once the potatoes are cooked, remove from the oven and place into a large mixing bowl. Drain and add the sliced red onion, olives, rocket, lemon juice, lemon zest, wholegrain mustard, a drizzle of olive oil and a large pinch of salt and pepper.

Mix really well before spooning onto serving plates with a pinch more pepper.
