Try this twist on the French classic — new potatoes, green beans and garlicky tomatoes are mixed with rocket and tossed with a creamy mustard and lemon dressing. For an even quicker version, simply add the tomatoes straight into the salad.

Bring a pan of salted water to the boil. Once boiling, add the potatoes. Cook for 10–⏱️ 12 minutes until the potatoes are soft, adding the green beans for the last ⏱️ 5 minutes. Once cooked, drain and spoon the potatoes and beans into a large bowl.

While the potatoes cook, place a pan over medium heat and add a drizzle of olive oil. Once warm, add the chopped tomatoes, garlic and a pinch of salt. Mix well and cook for a couple of minutes until the tomatoes soften. Then remove from the heat and spoon into the bowl with the cooked potatoes.

In a small bowl, mix together the lemon juice, mustard, olive oil, tahini and a pinch of salt.

Add the rocket, green olives and capers to the bowl with the potatoes. Pour in the dressing and mix well until everything is coated. Sprinkle with parsley and black pepper before serving.
