Preheat the oven to 200°C / 180°C fan.

Place the cauliflower on a baking tray and lightly drizzle with olive oil and season with salt and pepper. Bake, until golden in spots, about ⏱️ 15 minutes.

Meanwhile, in a medium bowl, lightly dress the kale with a drizzle of olive oil and season with salt and pepper. About half a teaspoon of oil should be enough.

Remove the baking tray from the oven and add the mushroom meatballs. Place the kale on top. Return the baking tray to the oven and bake, until the kale is crispy in spots and the meatballs are heated through, ⏱️ 5 - 7 minutes.

Drizzle with the walnut-red pepper sauce before serving.
