Preheat oven to 180°C / 160°C fan. Reheat the pre-cooked meatballs on a baking tray until warm, ⏱️ 5-7 minutes.

Meanwhile, place the carrot, fennel, and pepper in a medium bowl. Pour over the lemon juice, olive oil, and maple syrup and toss to combine. Season with salt to taste.

Place the salad leaves in a bowl. Add the dressed vegetables and warm meatballs. Drizzle with the walnut-red pepper sauce. Top with parsley and flaky sea salt, if desired.
