Spread the flatbreads with cream cheese to cover, then spread with the olive salad. Layer the provolone, ham, mortadella, and salami on top, covering the whole flatbread.

Starting with a short side, tightly roll up each flatbread. Wrap tightly in plastic wrap and refrigerate, seam-side down, for at least ⏱️ 2 hours and up to ⏱️ 12 hours.

Unwrap the rolls and trim the ends. Slice into 1-inch pinwheels (about 6 per roll).
