Preheat oven to 190°C / 170°C fan / 375°F.

Pour the miso paste, maple syrup, olive oil and water into a medium bowl, whisk to combine.

Place the carrots and parsnips onto a baking tray large enough to hold them in a single layer; pour over the miso glaze and toss to coat. Cover with a piece of foil and pinch around the edges to ensure the vegetables are completely enclosed.

Place into the preheated oven and bake for ⏱️ 25 minutes. Then carefully remove the foil and place them back into the oven to bake for a further ⏱️ 20 minutes. Sprinkle with fresh flat-leaf parsley before serving.
