Miso-Maple Caramel Popcorn
This is one of those addictive sweet treats that’s impossible to resist – we even had to hide them from ourselves in the office! The miso-maple caramel is sweet, salty, and just a little bit nutty thanks to the tahini. It’s quick, simple and perfect for sharing with friends.

To make the caramel, add all the caramel ingredients to a small saucepan set over low heat. Warm gently until bubbling, stirring until fully combined. Remove from the heat and set aside.

For the popcorn, warm the oil in a large saucepan over medium–high heat. Add 4 popcorn kernels to the pan and cover with a lid.

Once the kernels pop, add the remaining kernels in an even layer. Cover, remove from heat, and count ⏱️ 30 seconds.

Return the pan to the heat. When the popping starts in earnest, gently shake the pan to ensure even cooking. Keep the lid slightly ajar so steam can escape — this makes the popcorn crispier. When the popping slows to several seconds between pops, remove from the heat and tip into a large bowl.

Warm the caramel over low heat, if needed, then drizzle over the popcorn and toss well. Stir through the dates.
