Miso Aubergine Steaks With Jewelled Rice
Surprisingly easy and packed with flavour, these miso aubergine steaks are a real hit. We slowly roast the aubergine with miso and tamari, until each ‘steak’ is perfectly tender and packed with umami flavours; before serving them with jewelled pistachio, spring onion and chickpea rice.

Preheat oven to 180°C fan / 350°F and line a flat baking tray with baking parchment. For the miso aubergine, mix together the sesame oil, tamari, miso paste, chilli flakes (if using), sesame seeds and a pinch of salt. Score the aubergine slices lightly with a knife along the top side to make a criss-cross pattern, making sure to not cut all of the way through.

Brush ½ of the miso mixture over the aubergine slices on both sides and arrange in 1 layer on the lined baking tray. Bake for ⏱️ 40 minutes until golden. Once cooked, brush the aubergine slices with the remainder of the miso mixture.

Meanwhile, make the jewelled rice by mixing together all of the ingredients in a large bowl.

Serve the jewelled rice topped with the sticky miso aubergine and a sprinkling of sesame seeds.
