These Miso & Macadamia Oat Bites might sound fancy but they couldn’t be more foolproof and contain loads of plant-based goodness.

Preheat the oven to 160°C fan / 350°F. Line a shallow baking tray (about 30 x 35cm / 12 x 14″) with baking parchment. In a large bowl, mix together the coconut sugar, oats, macadamia nuts, sesame seeds and flaxseed; set aside.

In a small bowl or jug, stir together the nut butter, miso and soya milk until smooth. Pour into the dry ingredients and gently bring everything together until you have a rough dough — it will be quite sticky.

Next, scoop out dessertspoonfuls of the dough, roll into balls and place about 3cm / 1″ apart on the lined baking tray. Use the palm of your hand to roughly flatten the balls into 5cm / 2″ rounds.

Bake for ⏱️ 10 minutes until just golden. Remove from the oven and cool on a wire rack.

To decorate the oat bites with chocolate, melt the chocolate gently in the microwave on a low heat or in a bain marie; use a spoon to drizzle the chocolate over the bites in a zigzag pattern. Leave to cool completely or enjoy immediately.
