Put the peas and cashews into a bowl and cover with boiling water. Set aside to soak for ⏱️ 5 minutes.

Drain the peas and cashews then transfer to a blender along with the remaining ingredients, seasoning to taste. Blitz on a high speed for a couple of minutes until you have a smooth purée.
