Preheat oven to 180°C/160°C Fan/gas mark 4. Line a baking tray with parchment.

Whip egg whites until peaks form, then add sugar gradually until stiff and shiny.

Sprinkle cornflour, lemon zest, and 2 teaspoons juice over meringue and fold in.

Mound meringue onto tray in a 23cm circle and smooth the surface.
