Preheat oven to 325°F. Lightly grease a 12-cup mini cheesecake pan with removable bottoms.

Pulse together cookies and 1/4 teaspoon salt in a food processor until fine crumbs form, 10 to 15 times. Add butter and pulse until mixture holds together when pinched, 10 to 15 times. Press evenly into bottom of cups. Bake until edges are golden brown, 8 to ⏱️ 10 minutes. Cool completely.

Beat cream cheese on medium speed with an electric mixer until smooth, 1 to ⏱️ 2 minutes. Add yogurt and sugar and beat until combined, ⏱️ 1 minute. Add lime juice, vanilla, egg, and remaining 1/4 teaspoon salt. Beat until combined, ⏱️ 1 minute. Spoon over cooled crusts in pan.

Bake until puffed and centers are just set, 18 to ⏱️ 20 minutes. Cool in pan completely. Chill in pan until firm, at least ⏱️ 30 minutes.

Remove from pan and remove bottoms; transfer cheesecakes to a serving platter. Top with toasted coconut and mints.
