Gather and prep ingredients, and preheat the oven to 350°F (175°C). Grease a 9×13-inch casserole dish.

Heat oil and 1 Tbsp butter in a large skillet over medium heat. Add cubed chicken, ½ tsp salt, ¼ tsp pepper, and sear for ⏱️ 4-5 minutes until lightly golden (it doesn't need to be fully cooked), and transfer to a plate and set aside.

In the same skillet, melt 1 Tbsp butter and add sliced mushrooms, whites of green onions, and garlic, and cook for ⏱️ 6-8 minutes until softened and lightly browned.

Sprinkle flour over the vegetables and stir for ⏱️ 1-2 minutes to cook out the raw flour taste and form a roux.

Slowly whisk in chicken broth and milk. Simmer for ⏱️ 2-3 minutes until slightly thickened.

Cover the casserole dish loosely with foil. Bake for ⏱️ 25 minutes. Remove foil and bake an additional ⏱️ 10-15 minutes until bubbly and golden.
