For the simple syrup: In a small saucepan, combine the sugar, ½ cup of water, and the vanilla bean paste. Bring to a simmer over medium heat. Stir to dissolve the sugar. Remove from the heat and transfer a bowl set over an ice bath. Stir to cool completely.

For the milk punch: In a cocktail shaker, combine the half-and-half, bourbon or whiskey, vanilla bean simple syrup, and a few ice cubes. Shake for 10 to ⏱️ 20 seconds to chill thoroughly. Strain into a chilled coupe glass. Grate a small amount of nutmeg over top.
