In a medium pot, whisk together the sugar, cornstarch, and salt. Gradually whisk in 3 cups of the milk. Over medium heat, cook and stir until thickened and bubbly, about ⏱️ 2 minutes. Remove from heat and add in the vanilla and 2/3 cup of the chocolate chips; stir until melted and smooth.

For the cake croutons, arrange slices on a baking sheet and bake at 35F for ⏱️ 10-12 minutes, turning once, until browned. Let cool; cut slices into 1/2-inch cubes.

Place remaining 1/3 cup chocolate chips and the coconut oil in a small bowl and microwave on medium for about ⏱️ 1 minute, stirring once, until melted. Mix to combine.
