In a saucepan, heat lemon juice, sugar, butter, and peel until sugar dissolves and mixture is just about to boil.

Whisk eggs in a separate bowl. Slowly whisk warm lemon mix into eggs.

Return to saucepan and cook over low heat, stirring constantly, until thickened. Do not boil.
