Mash Laughing Cow cheese until mostly smooth.

In a saucepan over medium heat, whisk together cream, coconut milk, lychee syrup, sugar, and the mashed cheese until smooth. Whisk in matcha until dissolved.

Sprinkle in agar agar while whisking; continue whisking until fully dissolved. Bring to a gentle boil, then simmer 1–⏱️ 2 minutes to activate agar.

Divide lychee pieces among ramekins/cups. Pour in the hot mixture. Cool to room temperature, then chill at least ⏱️ 1 hour to set.
