Peel and cube sweet potatoes into 1-inch pieces. Place in a large saucepan, cover with water, and bring to a boil. Reduce heat to a simmer and cook for ⏱️ 12-15 minutes until very soft. Add the rosemary sprig for the last ⏱️ 5 minutes.

Drain potatoes using a colander. Return drained potatoes to the hot, empty saucepan over the lowest heat. Stir gently for ⏱️ 1-2 minutes to remove excess moisture. Discard rosemary.

Remove pan from heat. Add butter, honey, fine sea salt, and ground nutmeg. Mash with a potato masher until desired consistency. Season with fresh black pepper and taste, adjusting salt or honey as needed. Serve warm.
