Peel and cut sweet potatoes into 2-inch cubes.

Place sweet potatoes in a large pot (6-quart) and cover with water by an inch. Season with 3 teaspoons salt and bring to a boil, reduce heat down to medium-low and allow to simmer until fork tender (about ⏱️ 15-20 minutes).

Drain cooked potatoes, add in the butter, sour cream, garlic, remaining salt and parmesan.

Mash with a potato masher until smooth, adding milk if desired for a smoother/lighter mash.
