This marinated bean salad is the perfect dish to enjoy with a spread of summer salads and dips. The beans taste delicious mixed through the sliced peppers and spring onions, with the lime and tamari drizzle adding such a burst of flavour.

Place a pan of water over a medium heat and bring to the boil. Once boiling, add the green beans and blanch for ⏱️ 3 minutes. After ⏱️ 3 minutes, drain and rinse under cold water to stop them from cooking further.

Once drained, place the green beans in a large bowl and mix through the sliced peppers, sesame seeds, sliced red onion and spring onions.

Pour in the tamari, brown rice vinegar, lime juice, sesame oil, maple syrup and a large pinch of salt. Mix well until everything is coated in the liquid. Cover and place in the fridge for at least ⏱️ 1 hour.

In a small bowl, mix together the drizzle ingredients until a smooth dressing forms.

Once ready to serve, remove the beans from the fridge and spoon onto a serving plate. Drizzle the dressing over the beans and sprinkle over some more sesame seeds.
