Preheat the oven to 425 degrees F.

Thoroughly wash the sweet potatoes under cold water to remove any dirt or debris from the skin.

Once washed, place the whole potatoes in a large pot, fill with water and bring to a boil. Cook until the potatoes are fork tender; approximately ⏱️ 30 minutes; then drain and run under cold water to help cool down the potato so you can peel it.

Using a knife to carefully peel off the skin; then dice the sweet potatoes into uniform, 2-inch pieces and place in a mixing bowl.

Melt the butter in a small saucepan over medium-high heat until melted; then add the maple syrup, brown sugar and salt. Whisk until the mixture is smooth; then add the glaze to the diced sweet potatoes and mix well; tossing to coat.

Add the sweet potatoes to a small casserole dish and roast in the oven for ⏱️ 10-15 minutes or until the glaze is hot and bubbly. Remove from the oven and garnish with fresh chopped sage before serving.
